Maple & a New Wine

Maple in the County and a new wine for the Closson Chase family – a Pinot Gris

March 19 is a special day at Closson Chase.  We are celebrating Maple in the County with the release of the inaugural 2015 CLOSSON CHASE K.J. WATSON VINEYARD PINOT GRIS VQA FOUR MILE CREEKa veritable taste of summer 2015 in a glass.

The wine shows a delicate gold hue in the glass. The nose opens with aromatic tropical fruits, floral and honey notes with a hint of black licorice. On the palate, it is clean and steely with mineral and citrus, finishing with crisp acidity and round flavours. Suggested pairing: pan seared Pickerel with a pan jus au beurre or roast rabbit with roasted barley risotto. The wine was cool temperature fermented at 16 ⁰C in stainless steel tanks for 10 days, then cold stabilized to  0⁰C after fermentation. The result a refreshing wine with rich depth. A real crowd pleaser!

Winemaker Keith Tyers is bringing back his popular maple inspired pairing: Lobster Mac and Cheese made with Black River Maple Cheddar, a superior blend of medium-aged, fine artisan cheddar and Prince Edward County’s pure maple syrup.   The cost of the wine tasting and pairing is $5.  All proceeds will be donated to the Storehouse Foodbank. Bring the whole family to celebrate the labor of our  local maple producers with family friendly programming taking place all weekend.
