The nose is vibrant and expressive, revealing layers of bright red fruit, cola, delicate florals, warm spices, and earthy undertones of cedar. On the palate, it offers a full-bodied experience with a lively energy, slightly more vibrant than the South Clos. The fruit carries through seamlessly, balanced by a round, delicate texture. The wine’s bright acidity and well-integrated tannins culminate in a long, evolving finish that lingers gracefully.
Sourced entirely from our Churchside vineyard. Destemmed with no crushing and cold-soaked for 3-5 days. Fermented in 60hL oak tonneau, then aged 18 months in French oak barrels, 20% new. Full malolactic fermentation in barrel.
Food Pairing: Grilled or smoked fish, roasted pork loin or tenderloin with a thyme/mustard sauce, or mushroom ragout pasta are also options.
