2021 Stirling Barrique Pinot Noir

This rare wine is only produced in small batches every other vintage. Single vineyard and estate-grown, aged in locally coopered Canadian oak.

Strawberry, tart raspberry, and sweet red fruits show on the nose, followed by savoury and herbal tones. The palate dances with bright cherries and strawberries, leading to a savoury, earthy pop on the finish with firm tannic structure. 

Sourced entirely from our Churchside vineyards. Destemmed with no crushing and cold soaked for 3-5 days. Fermented in 60hL oak tonneau then aged for 18 months in oak barrels sourced from Stirling, Ontario. Full malolactic fermentation in barrel.

Serve with roasted beet salad with warm goat cheese or game meats like venison and quail.
